By the way, the name 'rollmops' comes from the Dutch "rol 'm op" meaning "roll it up" (it, or him – though in this case the gender is of no relevance as the difference between male and female herrings remains indistinguishable to the human taste bud.)

Yeah, it's raw pickled herring, rolled up around a piece of gherkin and/or sweet onion. The marinade is sweet & sour and it's delicious. No mayonnaise though.

neither have I, I always thought mops was a kind of fish and I did not appreciate the mayonnaise combined with onions and a cheesepricker
